This easy guacamole recipe has the unique, authentic taste of the tomatillo. If you're not familiar with the tomatillo, you'll recognize its tangy flavor from Mexican cooking. Or, substitute a small tomato.
Here's how to make guacamole:
2 avocados
1/8 tsp. granulated garlic (equivalent of one clove of garlic)
1 small lime
1 tomatillo
1/4 onion
Makes about: 1 1/2 cups
The most common kind of avocado is the Haas:
Use a sharp knife to slice through the skin. Make a deep cut lengthwise around the avocado.
Pull apart the halves of the avocado. One half will contain a large pit.
Hold that half with one hand, stick the knife into the pit, and draw out the pit.
Remove the peel from each half. It should easily pull away from a ripe avocado.
A tomatillo looks like a small green tomato in a papery husk. It's a distant relative of the tomato, but has a sharper, unique taste. You should find it in grocery stores near the chili peppers.
This is a different spice than powdered garlic or garlic salt. It is a little more difficult to find.
Garlic granules, however, retain much of the taste of fresh garlic without the storage problem.
